I am in the process of buying a house so have taken a forensic look at my finances recently and was shocked at how much money I wasted on convenient food options. I am a good cook and used to enjoy cooking from scratch but struggle with depression and got out of the habit over the last year or so.
Tonight I rooted around in my fridge and cupboard and found a potato, some spaghetti, spring greens, and a chunk of smoked pork from the Polish deli - and made it into a quick and easy pasta dish for me and my teenager, using an egg and some of the salty pasta water to make a basic sauce.
My teenager wolfed it down and loved it, and I felt really proud of myself for not giving in to ‘just buy a couple of ready meals at a premium price and have them delivered’. It was quicker than that, one pan to wash up, and saved us about £25 that I would have spent on additional junk to justify the delivery to myself.
